Birch trees are a common hardwood species in Maine hardwood forests. Birch trees, like maples, have an added benefit of significant sap flow during the spring time which can be consumed as sap or turned into syrup through heat driven evaporation process.

The primary type of sugar in birch syrup is invert sugar (glucose and fructose), whereas the primary type in maple syrup is sucrose. Its glycemic index is less than 50, which is lower than sugar or maple syrup.

This gives birch syrup different properties in culinary and confectionary processes, meaning it could make the crystallization when making desserts like fudge or frosting slower than the standard process but could make baked goods stay fresh longer since it is hygroscopic (absorbs moisture).
